Bacon and Cabbage is a traditional Irish dish often considered the national dish of Ireland. It consists of sliced back bacon boiled with cabbage and potatoes. Sometimes, other vegetables such as peas, carrots, or turnips may be added. The dish is usually served with mustard or parsley sauce.

Recipe

Ingredients:

  • 1 medium-sized green cabbage

  • 8 slices of bacon

  • 1 large onion, chopped

  • 1 cup of chicken broth

  • Salt and pepper to taste


Instructions:

  1. Rinse the cabbage and cut it into four wedges, removing the core.

  2. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set it aside, leaving the bacon grease in the skillet.

  3. Add the chopped onion to the skillet and cook until it's soft and translucent.

  4. Add the cabbage wedges to the skillet, turning them in the bacon grease to coat them.

  5. Pour the chicken broth into the skillet, cover, and simmer for about 15 minutes until the cabbage is tender.

  6. While the cabbage is cooking, crumble the cooked bacon.

  7. Once the cabbage is cooked, season it with salt and pepper, and sprinkle the crumbled bacon on top. Serve hot.
