Babenda is a traditional dish from Burkina Faso, a landlocked country in West Africa. It is a soup-like dish primarily made from leafy vegetables like spinach, sorrel, and amaranth, combined with dried or smoked fish and served over rice or couscous. The dish is rich in protein and nutrients, making it a staple food for many Burkinabés. The name "Babenda" is derived from the Moore language and means "a mixture of leaves".
Recipe
Ingredients:
500g of spinach
200g of dried fish
200g of dried shrimp
2 tomatoes
2 onions
2 cloves of garlic
1 chili pepper
1 cup of peanut butter
Salt to taste
1 tablespoon of vegetable oil
Water
Instructions:
Start by soaking the dried fish and shrimp in warm water for about 15 minutes.
Meanwhile, clean the spinach and cut it into small pieces.
Chop the onions, tomatoes, garlic, and chili pepper.
After the fish and shrimp have soaked, drain them and remove any bones from the fish.
Heat the vegetable oil in a large pot over medium heat.
Add the onions, garlic, and chili pepper to the pot and sauté until the onions become translucent.
Add the tomatoes to the pot and cook until they soften.
Add the fish and shrimp to the pot and stir to combine with the other ingredients.
Add the spinach to the pot and stir until it wilts.
Add the peanut butter to the pot and stir until it's well combined with the other ingredients.
Add enough water to the pot to cover the ingredients and bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes.
Add salt to taste and serve the Babenda hot.
