Attiéké is a traditional Ivorian dish made from cassava. It is a staple food in the Ivory Coast and is often served with grilled fish or meat. Its taste is subtle and slightly sour, similar to sourdough bread.

Recipe

Ingredients:

  • 2 cups of attiéké (cassava couscous)

  • 2 cups of water

  • 1 teaspoon of salt

  • 1 tablespoon of vegetable oil


Instructions:

  1. Pour the attiéké into a large bowl and break up any lumps with your fingers.

  2. Boil the water in a pot and add the salt.

  3. Pour the hot water over the attiéké, cover the bowl with a cloth, and let it sit for about 5 minutes.

  4. After the attiéké has absorbed all the water, fluff it with a fork to separate the grains.

  5. Heat the oil in a large pan over medium heat.

  6. Add the attiéké to the pan and stir it around until it's heated through.

  7. Serve the attiéké warm as a side dish or as a base for meat or vegetable stews.
