Recipe
Ingredients:
1 cup of rice
2 cinnamon sticks
4 cups of water
4 cups of milk
1 cup of sugar
1 teaspoon of vanilla extract
1/4 cup of raisins (optional)
Ground cinnamon for garnish
Instructions:
Rinse the rice under cold water until the water runs clear.
In a large pot, add the rice, cinnamon sticks, and water. Bring to a boil.
Once boiling, reduce the heat to low and let it simmer, uncovered, until the rice is tender and the water has almost evaporated, about 20 minutes.
Add the milk, sugar, and vanilla extract to the pot and stir well.
Increase the heat to medium-high and bring the mixture to a boil.
Once boiling, reduce the heat to low and let it simmer, uncovered, stirring occasionally until it thickens, about 20 minutes.
If using, add the raisins and stir well. Let it simmer for an additional 5 minutes.
Remove from heat and let it cool. The mixture will continue to thicken as it cools.
Before serving, remove the cinnamon sticks and sprinkle with ground cinnamon. You can serve it warm or chilled.
