Arbroath Smokies are a type of smoked haddock – a specialty of the town of Arbroath in Angus, Scotland. The fish are first salted overnight, then left to dry, and finally smoked over hardwood chips in a special barrel or kiln. The process gives the fish a distinctively rich and smoky flavor, with a golden-brown color. The Arbroath Smokie has been granted Protected Geographical Indication status under European Union law.

Recipe

Ingredients:

  • 2 Arbroath Smokies

  • 1 Lemon

  • Fresh Parsley


Instructions:

  1. Preheat the oven to 180C/350F/Gas 4.

  2. Place the Arbroath Smokies in a baking tray.

  3. Bake the smokies in the oven for about 15-20 minutes until they are thoroughly heated.

  4. Cut the lemon into wedges.

  5. Once the smokies are done, remove from the oven.

  6. Serve the smokies hot, garnished with the fresh parsley and accompanied by the lemon wedges.
