Anticuchos can be found in other Andean states, including Bolivia, Chile, and Colombia, with variations including different types of meat like chicken or sausage. The dish is often served with boiled potatoes or corn on the side.

Recipe

Ingredients:

  • 2 pounds of beef heart

  • 1 cup of red wine vinegar

  • 4 cloves of garlic, minced

  • 1 teaspoon of cumin

  • 1 teaspoon of ground pepper

  • 1 teaspoon of salt

  • 2 red chili peppers, finely chopped

  • 1/2 cup of fresh parsley, chopped

  • 4 medium potatoes

  • Wooden skewers, soaked in water


Instructions:

  1. Cut the beef heart into 1-inch cubes and place them in a large bowl.

  2. In a separate bowl, mix together the red wine vinegar, minced garlic, cumin, ground pepper, salt, chopped red chili peppers, and fresh parsley.

  3. Pour the marinade over the beef heart cubes and mix well. Cover the bowl and let it marinate in the refrigerator for at least 4 hours, or overnight for best results.

  4. Preheat your grill to medium-high heat.

  5. Thread the marinated beef heart cubes onto the soaked wooden skewers.

  6. Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the beef is cooked to your desired level of doneness.

  7. While the skewers are grilling, boil the potatoes until they are tender. Once cooked, cut them into slices.

  8. Serve the anticuchos with the sliced boiled potatoes. Enjoy your Peruvian anticuchos!
