Recipe

Ingredients:

  • 1 whole chicken, cut into pieces

  • 2 cans of coconut milk

  • 2 large tomatoes, diced

  • 2 large onions, chopped

  • 4 cloves of garlic, minced

  • 2 tablespoons of ginger, grated

  • 1 teaspoon of turmeric

  • Salt and pepper to taste

  • 2 tablespoons of vegetable oil

  • Fresh coriander leaves for garnish


Instructions:

  1. Heat the vegetable oil in a large pot over medium heat.

  2. Add the chicken pieces to the pot and cook until browned on all sides.

  3. Remove the chicken from the pot and set aside.

  4. In the same pot, add the onions, garlic, and ginger. Cook until the onions become translucent.

  5. Add the tomatoes to the pot and cook until they become soft.

  6. Return the chicken pieces to the pot and add the turmeric, salt, and pepper. Mix well to ensure the chicken is coated with the spices.

  7. Add the coconut milk to the pot and stir to combine.

  8. Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the chicken is cooked through and the flavors have melded together.

  9. Taste and adjust the seasoning if necessary.

  10. Garnish with fresh coriander leaves before serving.
