Accra is a traditional West African snack made from black-eyed peas or cassava. The ingredients are ground into a batter, mixed with various spices and onions, then deep-fried. The result is a spicy, savory fritter that is often served with a hot sauce or chutney. In different regions, variations of Accra may include fish or other proteins.

Recipe

Ingredients:

  • 2 cups black-eyed peas

  • 1 onion, chopped

  • 1 clove garlic, minced

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon chili powder

  • 1 cup vegetable oil for frying


Instructions:

  1. Soak the black-eyed peas in a large bowl of water for at least 8 hours, or overnight. Drain.

  2. In a blender or food processor, combine the soaked peas, onion, garlic, salt, pepper, and chili powder. Blend until smooth.

  3. Heat the oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).

  4. Drop the batter by spoonfuls into the hot oil, and fry until golden brown. Be careful not to overcrowd the pan.

  5. Remove the fritters with a slotted spoon and drain on paper towels. Serve hot.
